SCOLLOPS AND OYSTERS

Fresh king scollops

Dry weight – sold out of shell, with roe. NO ADDED MOISTURE! Our kings

are not expensive - if you have compared our price unfavourably with prices from other

suppliers, be sure of what you have been buying. If you have been offered frozen,

these are not as good – they are soaked before freezing (adds 15% moisture)

then have as much as 40% ice glaze. What you are buying can be as low as 45% fish,

as much as 55% water! If we have to sell this type of king scollop because the weather

is bad and fresh are not obtainable, we will tell you!

Queen scollops

Frozen, often roeless. Fresh queen scollops are some of the best – roe-on, very fresh.

But they are rare. Ask if you’re interested!

Oysters

From Exmouth and the Shetlands, the common Pacific type. No closed season.

First-class oysters purified at least twice, the safest you can eat. We will open them for you,

or you can purchase our oyster opener (click on the fish to find ). Also ask about native oysters

– they are a lot more expensive, but ideal for that special occasion.
