SPRATS, SARDINES, HERRINGS, MACKEREL,
JACKS AND WHITEBAIT
l Ask us to skin, pin and portion all fish to your requirements.
l All our fish is sold by weight, but if you want to order by the portion, we can price
by the portion, which may help your pricing.
l Give us a day's notice and your fish could be individually vacuum-packed - you could
put it straight into your freezer
Sprats
September to March. A good alternative to whitebait. They can also be baked in the oven on
a bed of salt. The secret is to cook them well, and salt them well.
Fresh Portuguese sardines
Fresh top-quality sardines flown in from Portugal. Either cooked whole,
or headed and
cleaned - we will do this for you.
Don't forget - we can vacuum-pack for you, with a day's notice!
Frozen Portuguese sardines
These are best frozen Peniche sardines. Ideal for keeping in the freezer and using
at barbeques.
English sardines
Usually very large (strictly speaking large sardines are pilchards), very good quality,
reasonable price. Taste and oil content slightly different from smaller Portuguese-type
sardines – see above. These are very seasonal – if you are interested, we will fax or
phone you when they are available.

Herrings
Rare these days. The best are from Norway. We will
always tell you whether they have roe in or not.

Mackerel
Finest Cornish mackerel.
We can fillet or prepare mackerel how you'd like them.
Our mackerel are unbeatable in quality.

Jumping jacks (chinchard)
Similar in flavour to mackerel, but less oily. May be a little more bony. Similar in flavour
to
the Portuguese carapau (click on the fish
), may be
grilled or barbequed.
Trevally jacks
Frozen from New Zealand, occasionally fresh from the Middle East. A nice fish with
good meat yield. White fleshed like a mackerel without the oil. Simple bone structure,
so easy to eat. From 500g to 1.5kg. We will fillet for you, just ask when you phone.

Whitebait
Flour or lightly batter and deep fry. A lb packet can serve up to 3 to 4 as a starter.
Breaded
whitebait (blanchebait)
As above, but ready breaded.
